Elderflower Cordial
Spring its here!
At this time of the year there is a lot of elderflower growing wild just about in every hedge and I have decided to make some use of it. Today I will share with you My Favourite recipe, an elderflower cordial Love it for its fresh, zesty flavour. It’s great to add as a splash to your water, iced tea or cocktails.





Ingredients:
2.5kg of granulated sugar
1.5l of water, preferably filtered
20 elderflower heads, pick with short stocks only
85g of citric acid
3-2 lemons peeled and cut into rings
Method:
On medium heat mix granulated sugar and water until dissolves without boiling it.
Bring syrup to boil and then turn off the heat. Add flowers ( first wash them gently in cold water to remove any dirt and bugs, shake well water off), citric acid and lemon rings. Stir it well together, cover the pan and leave in room temperature for 24 hours to infuse.
Pass through fine sieve, discard any bits left. Using funnel pour into sterilised bottles ( best way wash well in soapy water, rinse well and leave to dry it in low temperature oven).
Keep cordial in fridge for up to 6 weeks. It’s ready to use straight away.
Tip: Freeze the cordial in ice cubes trays, great way to refresh and cool down your drink in the same time!
